I grew up in Miami, Florida eating grits almost every morning for breakfast. I have to admit, I love grits! I used to eat them with a little butter and salt and that's it. Lately, we've been on a grits kick here at home. It used to be that I was the only grits-lover here, but the tides recently turned and my kids and husband have joined me on the grits bandwagon. How did I bring them over to the other side? I did it with "cheese" grits!
My "cheese" grits are easy, quick, delicious and versatile. This morning, we had them with a fried egg on top (and a little hot sauce for those that like a little kick). The other day, we made pulled pork, collard greens and quick-pickled some red onions and jalapeño. We used the "cheese grits" as a base and topped it with the pulled pork, pickled onions, and jalapeño (see the pic above). Not only was it delicious (so delicious!), but the plate was also beautiful and totally company-worthy (if it weren't a pandemic and we actually had company over ever).
These "cheese" grits are a perfect thing to make this Memorial Day weekend. Whether you're making them for breakfast, lunch, or dinner.
DAIRY-FREE & SOY-FREE "CHEESE" Grits
Recipe makes 3 generous servings, 4 side servings. Double if serving more than 4 people or if using as a main dish staple.
Ingredients
1 cup of Southern-style white corn grits (I outgrew Quaker because of the added BHT. My go-to brand is Bob's Red Mill Southern-Style White Corn Grits)
2 tbs Earth Balance Soy-Free Buttery Spread
1 tsp kosher salt
1/3 cup shredded cheddar "cheese" (I use Daiya or Violife)
Ground pepper (to taste)
Directions
Bring water and salt to a boil in a medium pot.
Add the corn grits and reduce heat to low. Cook for about 5 minutes, stirring occasionally, until liquid is absorbed and grits are creamy.
Remove from heat, cover, and let stand for 1-2 minutes.
Stir in the "butter" and cheese and stir until incorporated.
Add some ground pepper (to taste) and stir again.
Serve immediately!
Note: To make it more of a meal, top with a fried egg, pulled chicken or pork, shrimp, or your favorite veggies.
