Dairy-Free & Soy-Free Grilled Spicy Lime Chicken

This is a simple recipe — toss it together the night before and allow the chicken to marinade overnight so the flavors penetrate the meat. It’s tangy, flavorful and perfect for summer! The recipe serves 6.
Ingredients
1/3 c. canola oil
5 tbsp. lime juice
1 tsp. grated lime zest
6 cloves garlic, crushed
3 tsp. fresh oregano, chopped
1/2 tsp. red pepper flakes
1 tsp. salt
1/4 tsp. ground black pepper
6 skinless, boneless chicken breast halves
Directions
In a glass dish, mix the oil, lime juice, lime zest, garlic, oregano, red pepper flakes, salt, and black pepper. Add the chicken and turn to coat. Cover and marinate in the refrigerator overnight, turning once in the morning so all sides are evenly exposed to the marinade.
Preheat the grill on medium-high heat. Lightly oil the grill grate. Place the chicken on the grill. Cook for 6-8 minutes.
Turn the chicken. Brush with leftover marinade upon turning, then discard the remaining marinade. Cook for another 6-8 minutes, or until the chicken is cooked through. Serve immediately!
I am going to try this Spicy Lime Chicken recipe and from the start, I am going to use EVOO vs canola oil. If I may be so bold, Canola oil is inflammatory and very bad for you and I am searching for soy free dairy free recipes that are healthy. This one looks good but again, I would never use canola oil. If you are concerned about your health, research it and I bet you'll change you'll change your recipe.
